Description
Stevia (extract) is an intensely sweet sugar substitute derived from the leaves of Stevia rebaudiana, usually in the form of a white or light yellow powder or clear syrup. The taste is very sweet, often dozens to hundreds of times sweeter than sugar, with a possible slight, mildly anise or bitter aftertaste at higher doses. The product virtually provides no calories or carbohydrates and does not significantly raise blood glucose levels, making it a helpful tool in weight management and blood sugar regulation, although it may cause mild stomach discomfort or aftertaste in some individuals. In the kitchen, stevia extract is great for sweetening beverages, yogurts, smoothies, dressings, and desserts, and in baking, it is advisable to combine it with volume substitutes (e.g., erythritol, flours) due to its lack of structure. It pairs well with fruits, citrus, and coffee, but should be used cautiously. Store in a dry, cool place, tightly sealed, away from light and moisture; liquid forms should be kept in the refrigerator after opening, according to the manufacturer's recommendations.
