Description
Dried forest mushrooms (a mix of porcini and bay boletes) have an intense, earthy, and slightly nutty aroma with a distinct umami; in their dry form, they are dark, wrinkled, and hard, but after soaking, they regain their structure and deep flavor. They are low in calories, provide protein and fiber, and are rich in valuable microelements such as potassium, phosphorus, iron, and selenium, as well as B vitamins; they contain antioxidants and beta-glucans that support immunity. They are excellent for soups, broths, sauces, risottos, fillings for dumplings and meats, and as a base for mushroom concentrates and seasonings; it's worth keeping the soaking water as a flavorful broth. Store them in a sealed, dry, and cool place, away from moisture and light; after soaking, use them quickly (within a few days in the fridge) or freeze for longer storage.
