Description

Pork gelatin is a colorless or light brown substance with a delicate, practically neutral taste and a silky, transparent consistency when dissolved and set. It is derived from animal collagen and provides easily digestible amino acids, such as glycine and proline; it supports joint, skin, and intestinal mucosa health and may increase the feeling of fullness with low calorie content, although it does not replace complete protein. In the kitchen, it works well for jellies, desserts like panna cotta, mousses, terrines, and sauces that require clear gelling, as well as a stabilizer for fillings and sweets. Before use, it is best to soak (bloom) in cold water, then dissolve in heat. Store the powdered product tightly sealed, in a cool, dry place away from light; keep prepared gels in the refrigerator and consume within a few days.
