Preparation steps
Start blending on high speed. For the first 30-60 seconds, the nuts will turn into a coarse flour, resembling wet sand. This is a completely normal stage. If the nuts settle on the walls, stop the blender and use a spatula to push them down towards the blades.
Continue mixing for another minute. You will notice how the 'sand' starts to form into one large, thick ball. This is a sign that, due to friction and heat, the nuts are beginning to release their natural oils. The mixture will be very thick and stiff. You will likely need to stop the machine 1-2 times and break up this ball with a spatula.
It's a magical moment! Keep mixing continuously for the last minute. The thick ball will suddenly, almost in an instant, loosen up and turn into a smooth, velvety, and shiny peanut butter. The oils will completely release, creating a perfectly smooth emulsion. Mix until you achieve the desired consistency – the longer you mix, the thinner and creamier it will become.
When the butter is smooth, add 1 tablespoon of coconut oil, 2 pinches of salt, and optionally 1 teaspoon of cinnamon and 1 tablespoon of maple syrup to the blender. Blend again for 10-15 seconds, just to combine the ingredients. Taste and adjust with more salt or sweetener if needed.
Once ready, carefully transfer the warm peanut butter using a spatula to a clean, dry jar. Only seal the jar when the butter has completely cooled. Initially, it will be quite runny, but after chilling in the fridge, it will thicken to the perfect consistency.
