Preparation steps

1

Prepare the equipment and ingredients. Make sure the blender or food processor bowl is completely dry. Add 300 grams of roasted, unsalted peanuts. Have a silicone spatula on hand, it will be very helpful.

Ingredients: Roasted, unsalted peanuts
The key to success is a powerful appliance. A jug blender with a minimum power of 1000W or a sturdy food processor (kitchen robot) works best. Weaker devices may overheat or struggle to achieve a smooth consistency.
2

Start blending on high speed. For the first 30-60 seconds, the nuts will turn into a coarse flour, resembling wet sand. This is a completely normal stage. If the nuts settle on the walls, stop the blender and use a spatula to push them down towards the blades.

Ingredients: Roasted, unsalted peanuts
Don't be discouraged by the initial crumbly texture! Do not add any liquids at this stage, as it could ruin the entire process. Patience is key.
3

Continue mixing for another minute. You will notice how the 'sand' starts to form into one large, thick ball. This is a sign that, due to friction and heat, the nuts are beginning to release their natural oils. The mixture will be very thick and stiff. You will likely need to stop the machine 1-2 times and break up this ball with a spatula.

Ingredients: Roasted, unsalted peanuts
If your blender is struggling, take 15-second breaks to prevent the motor from overheating. Scraping the mixture from the walls is very important at this stage to ensure everything blends evenly.
4

It's a magical moment! Keep mixing continuously for the last minute. The thick ball will suddenly, almost in an instant, loosen up and turn into a smooth, velvety, and shiny peanut butter. The oils will completely release, creating a perfectly smooth emulsion. Mix until you achieve the desired consistency – the longer you mix, the thinner and creamier it will become.

Watch the transformation of the mixture closely. As soon as it becomes liquid, you can stop blending if you prefer thicker butter, or continue for another 20-30 seconds for a super creamy effect.
5

When the butter is smooth, add 1 tablespoon of coconut oil, 2 pinches of salt, and optionally 1 teaspoon of cinnamon and 1 tablespoon of maple syrup to the blender. Blend again for 10-15 seconds, just to combine the ingredients. Taste and adjust with more salt or sweetener if needed.

Ingredients: Olej kokosowy nierafinowany, Fine Himalayan salt, Ground cinnamon, Maple syrup
Add flavorings at the very end, when the base consistency of the butter is ready. Coconut oil is not absolutely necessary, but it makes the butter even creamier and more stable.
6

Once ready, carefully transfer the warm peanut butter using a spatula to a clean, dry jar. Only seal the jar when the butter has completely cooled. Initially, it will be quite runny, but after chilling in the fridge, it will thicken to the perfect consistency.

Use a sterilized and thoroughly dried jar to extend the shelf life of the butter. Store it in the refrigerator to keep it fresh for longer.

Fun Fact

💡

Although peanut butter is mainly associated with the USA, an early version was patented in 1884 by Canadian Marcellus Gilmore Edson. Its popularity grew thanks to John Harvey Kellogg (yes, the one from the cereals), who promoted it as a healthy, protein-rich meat substitute for the patients at his sanatorium.

Tips

🍽️ Serving

Serve on whole grain toast, topped with banana slices and a sprinkle of chia seeds. It tastes great as a dip for apple or celery sticks. You can add a tablespoon to your morning oatmeal or millet porridge, or blend it with banana and plant-based milk to create a nutritious smoothie.

🥡 Storage

Store butter in a tightly sealed jar in the refrigerator for 3-4 weeks. Natural separation of oil on the surface is normal – just mix the butter before use. Always use a clean spoon to avoid introducing contaminants into the jar.
