The base is high-quality, naturally cloudy apple juice, which is slowly heated with a bouquet of spices: cinnamon sticks, cloves, and star anise. Fresh orange slices add a touch of freshness and citrus notes, while fresh ginger adds a bit of spiciness. The secret of this recipe is the addition of fresh rosemary, which brings a surprising, forest-like, and slightly resinous note, perfectly balancing the sweetness of the apples and honey. Preparation steps

Start by thoroughly preparing the ingredients. Wash the orange very carefully under hot, running water, scrubbing its skin with a brush. This is to remove any wax and potential contaminants. Then dry it and, using a sharp knife, cut it into slices about 0.5 cm thick. Peel the ginger root (you can easily do this with the edge of a teaspoon) and cut it into 3 thin slices.

Use a large cutting board to have freedom of movement. If you don't have organic oranges, blanch them in boiling water for about 30 seconds before scrubbing to more effectively remove the wax.

In a large pot with a thick bottom (with a capacity of at least 2 liters), place all the prepared ingredients. Pour in the entire liter of apple juice. Add the orange slices, ginger slices, two cinnamon sticks, about 5 cloves, two star anise, and two sprigs of fresh rosemary. At this stage, do not add the honey yet.

A pot with a thick bottom is important because it evenly distributes heat and prevents the juice from the spices from burning. Use a wooden or silicone spoon for any stirring.

Place a pot on the stove over medium heat. Slowly heat the mixture until it becomes very hot, but do not bring it to a boil. This process is called hot maceration and allows for the full extraction of flavors from the spices. Once the drink is hot (you will see steam rising and a gentle ripple on the surface), reduce the heat to the minimum and heat everything for about 15-20 minutes. Stir occasionally.

It is crucial NOT TO BOIL the mulled wine. Boiling can cause the drink to become bitter, and the fruits and spices will lose some of their delicate aromas. The optimal temperature is around 80°C.

After 15-20 minutes of heating, remove the pot from the heat. Set it aside for 2-3 minutes to let the temperature of the drink drop slightly. Now is the perfect time to add sweetness. Pour two tablespoons of honey into the pot and mix thoroughly until completely dissolved. Taste the drink, and if you prefer a sweeter flavor, add another tablespoon of honey.

Adding honey to slightly cooled liquid (below 60°C) helps preserve its valuable enzymes and health properties, which are destroyed at higher temperatures.

Prepare heat-resistant mugs or glasses. Using a ladle and a small strainer, pour the hot drink into the containers. The strainer will catch small spices like cloves, leaving the liquid clear. In each serving, add a fresh slice of orange (you can use those from cooking or fresh ones), a sprig of rosemary, and a few cranberries for decoration. Serve immediately while hot.

If you want the drink to be completely clear, you can strain the entire contents of the pot through a fine sieve before pouring it into cups. If you are serving the drink at a party, you can transfer it to a thermos or a warmer to keep its temperature for longer.
