In a large pot with a thick bottom (with a capacity of at least 2 liters), place all the prepared ingredients. Pour in the entire liter of apple juice. Add the orange slices, ginger slices, two cinnamon sticks, about 5 cloves, two star anise, and two sprigs of fresh rosemary. At this stage, do not add the honey yet.
Place a pot on the stove over medium heat. Slowly heat the mixture until it becomes very hot, but do not bring it to a boil. This process is called hot maceration and allows for the full extraction of flavors from the spices. Once the drink is hot (you will see steam rising and a gentle ripple on the surface), reduce the heat to the minimum and heat everything for about 15-20 minutes. Stir occasionally.
After 15-20 minutes of heating, remove the pot from the heat. Set it aside for 2-3 minutes to let the temperature of the drink drop slightly. Now is the perfect time to add sweetness. Pour two tablespoons of honey into the pot and mix thoroughly until completely dissolved. Taste the drink, and if you prefer a sweeter flavor, add another tablespoon of honey.
