Description

An aromatic and warming drink, perfect for chilly autumn and winter evenings. It is a non-alcoholic version of popular European mulled wines, inspired by Scandinavian Glögg and German Glühwein. At its heart is naturally cloudy apple juice, slowly heated with a wealth of spicy seasonings: cinnamon sticks, cloves, and star anise. Freshness and a citrus note are added by slices of juicy orange, while a surprising, forest-like accent comes from sprigs of fresh rosemary. The drink has a deep amber color, and the aroma that fills the house while it simmers creates a festive atmosphere. Served hot and garnished with spices, it is not only a delicious drink but also a beautiful table decoration. It tastes great on its own, as a companion for an evening with a book, or as a welcoming drink for guests during holiday gatherings.

Preparation steps

Start by thoroughly preparing the orange. Wash it under running warm water, scrubbing the skin with a soft brush. Then, pour boiling water over it slowly, covering the entire surface – this will remove the preserving wax and any possible impurities. Dry the orange with a paper towel. Place it on a cutting board and, using a sharp knife, slice it into pieces about 0.5 cm thick.

Use a stable cutting board and a sharp chef's knife or fruit knife. A dull knife can crush the fruit instead of cutting it. Thoroughly washing the skin is crucial, as it will be heated along with the drink.

In a large pot, place all the ingredients. Pour in 1 liter of cloudy apple juice. Add sliced oranges, two cinnamon sticks, about 10 whole cloves, two star anise, and two fresh sprigs of rosemary. If you want the drink to be spicier, add an optional slice of fresh ginger now.

The best option is a pot with a capacity of at least 3 liters and a thick bottom. This will prevent the sugars from the juice from burning and ensure even heat distribution. Arrange the ingredients freely; they do not need to be placed in any specific order.

Place a pot on the stove over medium heat. Slowly heat the mixture, stirring gently with a wooden spoon from time to time. Watch the drink – the goal is to bring it to a point where it is very hot and starts to steam, with small bubbles forming at the edges of the pot. This is a crucial moment - do not allow the drink to boil.

Avoid bringing the mulled wine to a boil! Vigorous boiling will cause the delicate aromas of the spices to evaporate, and the drink may take on a bitter aftertaste, especially from the orange peel. The ideal temperature is around 80°C.

When the drink reaches the right temperature (just before boiling), reduce the burner to the absolute minimum. Cover the pot with a lid and let it simmer on low heat for 15-20 minutes. This process, called maceration or infusion, will allow the spices and fruits to slowly release their essential oils and deep flavor into the apple juice.

Make sure the burner is set to a very low power so that the drink only simmers gently and does not boil. If you have an electric stove, you can even turn off the heat and leave the pot on the hot plate for 20 minutes.

After the infusion time has passed, remove the pot from the heat. Using a spoon, taste the drink. If the apple juice was sour and the mulled wine needs sweetening, optionally add 1-2 tablespoons of maple syrup. Stir until completely dissolved. Then, using a ladle, carefully pour the hot drink into prepared mugs or thick glass cups. For each serving, add a slice of orange and a sprig of rosemary taken from the pot.

The safest way to serve hot liquids is with a ladle. To avoid small spices, like cloves, falling into the cups, you can pour the liquid through a small strainer or simply pour slowly and carefully. Serve immediately while the drink is hot.

Serve the mulled wine very hot, in thick glass mugs or ceramic cups that will keep the heat for a long time. Place a slice of orange and a sprig of rosemary from the pot in each mug for decoration. For adults, to create an alcoholic version, you can add a shot (25 ml) of dark rum, brandy, or amaretto directly to the mug.

The remaining drink can be stored in the refrigerator in a closed jar or pitcher for up to 3 days. Before storing in the refrigerator, it is recommended to strain the spices and fruits to prevent the flavor from becoming too intense and bitter. Reheat gently over low heat, avoiding boiling.
