Freshness and a citrus note are added by slices of juicy orange, while a surprising, forest-like accent comes from sprigs of fresh rosemary. The drink has a deep amber color, and the aroma that fills the house while it simmers creates a festive atmosphere. Preparation steps
In a large pot, place all the ingredients. Pour in 1 liter of cloudy apple juice. Add sliced oranges, two cinnamon sticks, about 10 whole cloves, two star anise, and two fresh sprigs of rosemary. If you want the drink to be spicier, add an optional slice of fresh ginger now.
Place a pot on the stove over medium heat. Slowly heat the mixture, stirring gently with a wooden spoon from time to time. Watch the drink – the goal is to bring it to a point where it is very hot and starts to steam, with small bubbles forming at the edges of the pot. This is a crucial moment - do not allow the drink to boil.
When the drink reaches the right temperature (just before boiling), reduce the burner to the absolute minimum. Cover the pot with a lid and let it simmer on low heat for 15-20 minutes. This process, called maceration or infusion, will allow the spices and fruits to slowly release their essential oils and deep flavor into the apple juice.
After the infusion time has passed, remove the pot from the heat. Using a spoon, taste the drink. If the apple juice was sour and the mulled wine needs sweetening, optionally add 1-2 tablespoons of maple syrup. Stir until completely dissolved. Then, using a ladle, carefully pour the hot drink into prepared mugs or thick glass cups. For each serving, add a slice of orange and a sprig of rosemary taken from the pot.
