Start by preparing the ingredients. Wash the orange very thoroughly under warm running water, using a vegetable brush to remove wax and impurities. Then, pour boiling water over it slowly covering the entire surface. Dry the fruit with a paper towel. Using a sharp knife, cut the orange into slices about 0.5 cm thick. Rinse the rosemary sprigs under cold water and gently dry them. If you are using optional ginger, cut off a piece about 2 cm long, scrub it, and slice it thinly.

Use a cutting board designated for fruits to avoid transferring smells, such as from garlic or onion. Thoroughly washing and blanching the oranges is crucial, as we will be heating them with the peel.

In a large pot (with a capacity of at least 2 liters), pour in the entire liter of apple juice. Add all the spices: two cinnamon sticks, eight cloves, and two star anise. Also, toss in the previously prepared orange slices, two sprigs of rosemary, and optionally, slices of ginger. Gently stir everything with a wooden spoon.

The best choice is a pot with a thick bottom that distributes heat evenly and prevents the juice from burning. Using whole spices instead of ground ones is important for the clarity and flavor of the drink.

Place a pot on the stove over medium heat. Slowly heat the drink until it becomes very hot, but do not bring it to a boil. When the first small bubbles start to appear on the surface and an intense, spicy aroma rises from the pot, reduce the heat to the minimum. Cover the pot with a lid and let the drink steep for about 15-20 minutes. It should gently 'flicker' but not bubble.

This is the most important step! Boiling the drink will cause the spices to become bitter, and the delicate aromas will evaporate. Patient, slow heating allows for the full depth of flavor to be extracted from the ingredients.

After about 20 minutes, remove the pot from the heat. Taste the drink with a teaspoon (be careful, it's hot!). If you prefer sweeter flavors, now is the time to add honey. Wait 2-3 minutes for the mulled wine to cool slightly (to a temperature below 60°C), add two tablespoons of honey, and stir well until completely dissolved.

Adding honey to a liquid that is too hot destroys its valuable health properties. If you're unsure of the temperature, just wait a few minutes after removing it from the heat. Instead of honey, you can use maple syrup, which will dissolve just as easily.

Prepare cups or glasses made of thick glass. Using a ladle and a small strainer, pour the hot drink into the vessels. The strainer will catch small pieces of spices. For decoration, place one of the warmed orange slices and a fresh sprig of rosemary (you can use new ones, not the ones from cooking) in each cup. Serve immediately while hot.

Using a strainer when pouring will ensure a perfectly clear drink. If you like it 'rich', you can leave the spices in the drink, but warn your guests not to chew on them. Mulled wine looks best in transparent cups that showcase its beautiful color.
