Description
White couverture chocolate is a creamy, pearl-white product with an intense, buttery flavor and noticeable notes of milk and vanilla; unlike regular white chocolate, it has a higher cocoa butter content, which gives it better fluidity and shine after tempering. In terms of nutritional value, it mainly provides energy from fat and sugar, contains dairy ingredients, and trace amounts of minerals such as calcium; when consumed in moderation, it can be a source of quick energy, but one should keep in mind its high calorie and sugar content. White couverture is suitable for coatings, ganache, decorations, and baking, ideal for tempering, molds, and fillings in confectionery. Store in a dry, cool place (15–18°C), away from light and strong odors, in a sealed package and at humidity below 50%; avoid frequent temperature changes, and if cooling is necessary, wrap tightly and first acclimatize to room conditions to prevent "bloom."
