Description

White quinoa consists of small, pearl-like grains with a creamy color and a delicate, slightly nutty flavor that becomes fluffy, soft, and pleasantly separate when cooked. It has a subtler aroma than red or black varieties, making it easy to pair with many dishes. It is a source of complete protein containing all essential amino acids, rich in fiber, iron, magnesium, manganese, and B vitamins, and is naturally gluten-free, which promotes satiety, muscle recovery, and cardiovascular health. In the kitchen, it is used as a substitute for rice or groats, in salads, soups, fillings, vegetable patties, sweet breakfasts, and baked goods. Before cooking, it is advisable to rinse the grains and cook in a ratio of about 1:2 (grain:water) for 12–15 minutes. Store dry in an airtight container in a cool, dry place; cooked in the refrigerator for 3–4 days or freeze for up to 2 months.
