Wine vinegar
Description
Wine vinegar is a clear or slightly amber liquid with a distinct yet mild acidity and a subtle wine aroma that adds freshness and a slightly fruity note to dishes. It pairs well with salads, sauces, marinades, for deacidifying soups, deglazing pans, or preserving vegetables, where it balances fats and enhances flavor. Nutritionally, wine vinegar has very few calories and provides almost no macronutrients, but it contains acetic acid and trace amounts of polyphenols and minerals from wine, which may support digestion, positively influence glucose control, and have antioxidant effects. It should be stored tightly closed in a dark, cool place in a glass bottle; it does not require refrigeration but is best used within a year for optimal aroma.
