Description

Celery is a crunchy, long stalk with a light green hue and a slightly ribbed texture, featuring a mildly salty-bitter, fresh aroma; the leaves are more intense in flavor and aroma, often used as a seasoning. It is low in calories, rich in fiber, vitamin K, vitamin C, potassium, and folic acid, as well as antioxidants and compounds with anti-inflammatory properties, which support digestion, hydration, and cardiovascular health. In the kitchen, it works well raw in salads and as a crunchy snack for dips, as a base for broths and sauces (mirepoix), in soups, stews, stir-fries, as well as in juices and fillings. It should be stored in the refrigerator in the vegetable drawer, wrapped in a damp towel or in a perforated bag, away from ethylene-producing fruits; it typically stays fresh for 1–2 weeks, and after blanching, it can also be frozen.
