Description

Soft goat cheese is a white, delicate product with a creamy, slightly grainy texture and a fresh, mildly tangy flavor with a distinct milky note. Its aroma can be subtly spicy, and the consistency—ranging from spreadable to slightly crumbly—depends on the degree of ripeness. It is rich in easily digestible protein, calcium, and phosphorus, contains vitamins A and B group, and often beneficial bacteria cultures in fresh varieties; due to its lower lactose content and different fat profile, it is sometimes better tolerated than certain cow's milk cheeses. In the kitchen, it works well as an addition to salads, sandwiches, and tarts, as a filling for pancakes, an ingredient in creamy sauces, and also in combination with honey, fruits, nuts, and beets. Store in the refrigerator in its original packaging or wrapped in parchment paper, at a temperature of about 2–4°C; it can also be submerged in oil or brine to extend its shelf life. Once opened, it is best consumed within 7–14 days, long-term freezing is not recommended.
