Description
Fresh shiitake mushrooms have meaty, flat caps with a warm brown color and delicate, striped gills, exuding an intense earthy-umami aroma reminiscent of broth or roasted mushrooms. They have a firm texture and short, edible stems, making them an attractive visual and flavor addition. They are low in calories, a source of fiber, plant protein, and B vitamins, as well as minerals such as potassium, copper, and selenium; they contain bioactive compounds (e.g., lentinan) that may support immunity and have anti-inflammatory effects. In the kitchen, they pair well with Asian dishes, stir-fries, soups, risottos, braised sauces, and baked dishes, enhancing the flavor of meats and plant-based meals. Store in the refrigerator, preferably in a paper bag or loosely wrapped, avoiding plastic to prevent moisture buildup; use within 5–7 days. They can be dried to enhance their aroma or frozen after a brief sauté.
