Description
Cornstarch is a fine, white powder with a neutral, almost imperceptible taste that quickly forms transparent, glossy gels when added to hot liquids and thickens dishes; in most applications, it can be replaced with potato starch, which gives a similar effect. Nutritionally, starch is almost pure carbohydrate with high energy value, virtually free of fat and protein, low in micronutrients, but naturally gluten-free, making it useful in the diet of those with gluten intolerance; it should be used in moderation as a source of quick energy. Typical uses include thickening sauces, soups, purees, and pie fillings, breading for crispiness, and as an ingredient in gluten-free baking. Store in a sealed container in a dry, cool place, away from moisture and strong odors; before use, it is advisable to dissolve it in cold water to avoid lumps.
