This is a non-alcoholic version of popular cider, prepared with natural, cloudy apple juice, slowly heated with a bouquet of spicy spices. The deep, sweet-and-sour flavor of apples perfectly complements the spicy ginger, sweet cinnamon, intense cloves, and anise. The addition of fresh orange brings a refreshing, citrus note that balances the sweetness. Visually, the drink delights with its beautiful amber color and served in glass mugs with a cinnamon stick and a slice of orange, it becomes a decoration for any table. It is an ideal option for gatherings with family and friends, as an alternative to mulled wine, which can be enjoyed by both adults and children. Start by preparing the fruits and spices. Thoroughly wash both oranges under running warm water, scrubbing the skin with a brush. Then pour boiling water over them to remove wax and impurities. Cut one orange into slices about 0.5 cm thick. Squeeze the juice from the other orange into a small bowl. Peel the fresh ginger using a small knife or the edge of a teaspoon (this is a very effective method), and then slice it into thin pieces.

To wash oranges, use a vegetable brush. Blanching in boiling water is crucial if you are using the peel, as it removes preservatives. You can use a manual citrus juicer for squeezing the juice.

Cooking the drink

In a large pot (with a capacity of at least 4 liters), pour in the entire apple juice. Add the prepared ingredients: orange slices, the juice squeezed from the second orange, and ginger slices. Toss in all the dry spices: cinnamon sticks, whole cloves, and star anise. If using, also add a pinch of freshly grated nutmeg.

Use a heavy-bottomed pot that distributes heat evenly and prevents the juice from burning. At this stage, do not add the maple syrup yet - you will do this at the end, adjusting the sweetness to taste.

Place a pot on the stove over medium heat. Slowly heat the mixture until it is very hot, but do not bring it to a boil. When small bubbles start to appear on the surface and steam rises from the pot, immediately reduce the burner to the lowest setting. The drink should only gently 'flicker', not boil vigorously.

The most important mistake to avoid is boiling the juice. Boiling can cause the drink to become cloudy and lose some of its delicate aromas. It's about slowly heating and extracting flavor from the spices.

Cover the pot with a lid, leaving a small gap for steam to escape. Cook on the lowest heat for at least 60 minutes. The longer the drink is heated, the more intense and deep its flavor and aroma will be. Stir occasionally, about every 15-20 minutes, to allow the flavors to blend evenly.

Patience is key. This step allows the spices to fully release their aroma into the juice. You can extend the heating time to even 2 hours, making sure that the drink does not boil.

After an hour of heating, turn off the burner. Using a ladle, carefully taste the drink. Assess its sweetness. If the natural sweetness from the apple and orange juice is not enough for you, now is the time to add maple syrup. Add it gradually, one tablespoon at a time, mixing and tasting after each addition until you reach your perfect level of sweetness.

Remember that maple syrup has its distinctive flavor. If you don't like it, you can use honey (add it when the drink has cooled slightly so it doesn't lose its properties) or brown sugar.

Serving

Prepare heatproof mugs or glasses. Place a fine mesh strainer on top of them. Using a ladle, slowly pour the hot cider through the strainer into the mugs. This will ensure the drink is clear, without pieces of spices and ginger. Garnish each serving with a fresh cinnamon stick, a slice of orange, or a few fresh cranberries. Serve immediately while hot.

Use a sieve with the finest mesh to catch all the small bits. If you want to keep some spices for decoration in the cups (e.g. a star anise), you can fish them out of the pot with a spoon and add them to the drink after straining.

The tradition of drinking hot, spiced cider dates back to medieval England and is associated with a ritual called 'wassailing'. It was a ceremony during which people visited orchards, singing and toasting with hot cider to ensure a bountiful apple harvest in the coming year.

Serve the drink in thick-walled, heat-resistant glasses or ceramic mugs that will keep the heat for a long time. For the adult version, you can add 25-30 ml of dark rum, brandy, or whiskey to each serving. A beautiful decoration is also to stick cloves into the peel of an orange slice.

The remaining drink can be completely cooled, then strained through a sieve into a glass bottle or jar and stored in the refrigerator for 3-4 days. To reheat, pour the desired amount into a small pot and warm it over low heat, without bringing it to a boil.
