Visually, the drink is stunning – it has a beautiful, golden color, and the spices and slices of fruit submerged in it create a picturesque whole. Preparation steps
In a large pot with a thick bottom (capacity about 3-4 liters), combine all the liquid ingredients and spices. Pour in 1 liter of cloudy apple juice. Add the freshly squeezed juice from half an orange. Toss in the pot the cinnamon sticks, whole cloves, star anise, and two sprigs of fresh rosemary. If you opted for the version with extra heat, add the ginger slices now.
Place a pot on the stove over medium heat. Slowly heat the mixture, stirring gently with a wooden spoon from time to time. Watch the drink – your goal is to bring it to the point where it is very hot and small bubbles begin to appear at the edges of the pot. This is known as the simmering point. Absolutely do not bring the mulled wine to a vigorous boil.
When the drink reaches the right temperature (just before boiling), immediately reduce the heat to the minimum. Cover the pot with a lid, leaving a small gap for the steam to escape. Let the mulled drink simmer on low heat for 15 to 20 minutes. This process, called infusion, will allow the spices to slowly release all their flavor and aroma into the apple juice. A wonderful, festive scent will begin to fill your kitchen.
Remove the pot from the heat. Now is the time to sweeten if necessary. If the apple juice is not sweet enough, add honey. Pour in one or two tablespoons of honey and stir vigorously until completely dissolved. Taste and add more if needed. Then, using a ladle and a fine mesh strainer, pour the hot drink into a heatproof pitcher or directly into mugs. The strainer will catch the fine spices.
It's time to serve. Place one of the prepared orange slices into each mug of hot mulled wine. To enhance the aroma and for a beautiful presentation, you can also add a small, fresh sprig of rosemary. Serve immediately while the drink is hot and most aromatic.
