Prepare the tools and glassware: take 2 highball glasses (capacity 300–350 ml each), a bar jigger or a small measuring glass of 50 ml, a muddler or the end of a wooden spoon, a bar spoon or a long mixing spoon, and a cutting board and sharp knife for the limes. Make sure the sparkling water and rum are well chilled.

If you don't have a muddler, use the end of a wooden spoon. A highball glass is best with a capacity of 300–350 ml. Do not use small cocktail glasses — mojito is served in tall glasses.

Prepare the limes: wash the limes under running water, then dry them. Cut each lime in half crosswise. Squeeze the juice from both limes into a small bowl or measuring cup — you should get about 50–70 ml of juice (on average 25–35 ml from half a lime). Keep the halved limes for later decoration or additional zesting.

Use a manual citrus juicer to get more juice and fewer seeds. Check the amount of juice: 50–70 ml is the norm for 2 limes; if there is less, you can use an additional 1/2 teaspoon of sugar to balance the acidity.

Muddling (mashing mint with lime and sugar)

Evenly distribute 15 g of sugar into each glass (a total of 30 g for both) and add half of the freshly squeezed lime juice. Place 6 g of fresh mint leaves into each glass (a total of 12 g). Use a muddler and gently mash for 20–30 seconds: make short, soft rotating and pressing movements until you feel the intense aroma of mint and the sugar partially dissolves. Do not tear the leaves into shreds — the goal is to release the essential oils from the leaves, not to crush them into a paste.

Use a muddler or the end of a wooden spoon. A common mistake is grinding too hard, which causes a bitter taste (green and chlorophyll notes). It's ready when you smell a fresh, intense mint aroma and the sugar has partially dissolved (check by touch - the granules will be softer).

Mixing

Measure 50 ml of white rum for each glass (a total of 100 ml of rum) and pour it into the glass with crushed mint, lime, and sugar. Gently stir with a bar spoon for 10–15 seconds, until the sugar dissolves further and all the ingredients combine.

Use a bar jigger or a small glass. If the sugar is still grainy, stir longer. Do not pour everything into one container — mix directly in the glasses you will serve the cocktail in.

Adding ice and sparkling water

Fill each glass with crushed ice to the top (use about 150 g of ice per glass, 300 g in total). Then top each glass with chilled sparkling water — about 125 ml per glass (250 ml total). If you want a romantic version, add 10 g of grenadine to each glass (20 g in total) — pour it gently along the side of the glass to create a gradient effect.

Crushed ice cools faster and mixes flavors better. If you are using grenadine, add it after pouring in the sparkling water, and then gently stir without mixing too vigorously to maintain the visual effect of layers.

Final mixing and decoration

Gently stir the contents of each glass for 5–8 seconds with a bar spoon, making a few turns from top to bottom to combine the rum with the sparkling water, but do not lose the bubbles. Garnish each glass with a sprig of fresh mint (trimmed at the base, lightly rubbed between your fingers to release the aroma) and a slice of lime on the rim.

Do not mix too vigorously or for too long — this will make the drink flat. When decorating, rub the mint sprig between your hands a few times to release the oils (do not crush the leaves). It is best served immediately.

Serve immediately, with two straws or one decorative straw for a couple. Explain to the guests that the cocktail is best enjoyed right away to savor the freshness of the mint and the bubbles of the sparkling water.
