Preparation of the toasts

On a cutting board, place one slice of brioche bread. Take a glass with a diameter of about 5-6 cm or a round cookie cutter. Press it into the center of the slice and push down firmly to create an indentation. Be careful not to cut through the bread completely. The goal is to flatten the center, creating a 'nest' for the egg. Repeat the process with the second slice.

Use a thick, stale slice of bread (e.g., one-day-old) – it will be more stable and better absorb the egg mixture without falling apart. If the center of the bread comes out, don't worry, just place it back at the bottom of the indentation.

Prepare the egg mixture. In a flat, wide dish (e.g., a deep plate or baking dish), crack one egg. Add milk, vanilla sugar, cinnamon, and a pinch of salt. Take a fork or whisk and vigorously beat the ingredients for about a minute, until the mixture is smooth, fluffy, and free of visible egg white lumps.

Use a dish that can comfortably fit the entire slice of bread. Thoroughly mixing the ingredients is key to ensure that each piece of toast is evenly coated with the aromatic mixture.

Dip each slice of bread with the indentation into the prepared egg mixture. First, one side for about 5-10 seconds, and then the other side for another 5-10 seconds. The bread should be well soaked, but not dripping with liquid, as it will become too soft. Gently lift the slice, allowing the excess mixture to flow back into the container.

Do not soak the bread for too long! The goal is to moisten the surface, not to soak the entire slice. If you are using fresh, very soft bread, reduce the soaking time to 3-4 seconds per side.

Baking in the Air Fryer

Prepare the air fryer. Line the Air Fryer basket with a piece of parchment paper, cutting it to the appropriate size. In a small bowl, melt the butter (you can do this in the microwave for 15-20 seconds). Using a kitchen brush, coat both sides of each soaked slice of bread with the melted butter. Place the toasts in the fryer basket, leaving a small gap between them.

Baking paper will prevent sticking and make cleanup easier. If you don't have a brush, you can gently spread the butter with the back of a teaspoon. Don't skip the butter – it will give the toast crispiness and a beautiful color.

Now the most important moment: cracking the eggs. Very carefully crack one egg directly into the indentation in each slice of bread. Try to keep the yolk intact and centered. If a little egg white spills over the indentation, don't worry, it will set during baking.

To avoid eggshells in your egg, you can first crack the egg into a small bowl and then gently pour it into the indentation in the toast. This gives you more control and allows you to easily remove any potential pieces of shell.

Remove the basket from the air fryer. Set the temperature to 180°C and the time to 8-10 minutes. The cooking time depends on the power of your device and your preferred doneness of the yolk. After 8 minutes, the egg white should be fully set, while the yolk remains runny. If you prefer a firmer yolk, cook for an additional 1-2 minutes.

Every Air Fryer works a little differently, so for the first time, it's a good idea to check the toast after 7-8 minutes. Gently shake the basket – if the egg white is still translucent and 'jiggles', it needs more time. The toast should be golden-brown and crispy around the edges.

Preparing avocado

While the toast is baking, prepare the avocado paste. Cut the avocado in half lengthwise, rotating the knife around the pit. Twist both halves in opposite directions to separate them. Gently insert the knife blade into the pit and twist to remove it. Use a spoon to scoop the flesh out of the skin and transfer it to a bowl. Add lemon juice, a pinch of salt, and freshly ground pepper. Mash everything with a fork to your desired consistency – you can leave larger pieces or make it completely smooth.

When the toasts are ready, carefully remove them from the Air Fryer basket using a spatula. Transfer to plates. Spread the prepared avocado paste on the toasts, surrounding the baked egg. Garnish the dish by sprinkling optional chili flakes for spiciness and finely chopped chives for freshness. Finally, if you enjoy the combination of sweet and salty flavors, drizzle everything with a bit of maple syrup. Serve immediately while hot.
