Description

Vegetable broth has a clear to slightly cloudy consistency and a color ranging from light golden to amber, with a delicate, fresh aroma of vegetables and a subtle hint of herbs; the taste is mildly salty with a pleasant umami, depending on the vegetables and spices used. It is low in calories, low in fat, and usually a source of minerals such as potassium and magnesium, as well as trace amounts of water-soluble vitamins; as a liquid base, it helps with hydration, supports digestion, and can provide nutrients without adding calories. In the kitchen, vegetable broth is used as a versatile base for soups, sauces, risottos, grains, braising, and cooking rice or vegetables, as well as for lightening creams and one-pot dishes.
