Description

Powdered sugar for icing is finely ground, snow-white sugar with a very delicate, intensely sweet note and a velvety texture that almost instantly dissolves on the tongue and in confectionery mixtures; it often contains a small addition of starch to prevent clumping. It works perfectly for preparing icings, glazes, buttercreams, royal icing, for dusting cakes, cookies, and fruits, as well as for thickening and smoothing desserts where a smooth, uniform consistency is needed. Nutritionally, it is practically pure carbohydrate — about 387 kcal per 100 g, almost devoid of protein, fat, and minerals — so it serves as a quick source of energy, but it should be used sparingly. Store in an airtight container in a dry, cool place away from moisture and odors; if clumped, it is advisable to sift before use.
