Description

Red wine ranges in color from ruby to deep purple and is characterized by a rich, layered bouquet — notes of red and black fruits, vanilla, herbs, and noticeable tannins that give it structure and a lightness of dryness or sweetness depending on the style. In the glass, it can be light and fruity or full-bodied and oaky, with a long finish. Nutritionally, it provides calories from alcohol and sugars, as well as polyphenols, including resveratrol, which in moderate amounts are associated with cardiovascular protection and antioxidant effects; however, one should keep in mind the risks associated with alcohol. In the kitchen, red wine pairs wonderfully with red meat, stews, reduction sauces, braised dishes, as well as aged cheeses and mushroom-based dishes.
