Light soy sauce
Description
Light soy sauce is a clear, amber liquid with an intense umami flavor, distinct saltiness, and a subtle sweetness derived from fermented soybeans (often with added wheat). It has a light, thin consistency and a transparent color, making it suitable for seasoning without significantly darkening the dish. Nutritionally, it is low in calories, contains small amounts of protein and amino acids formed during fermentation, and has antioxidants; however, it is high in sodium, so it should be used sparingly. People with gluten intolerance should check labels. In the kitchen, light soy sauce is used as a basic seasoning for stir-fries, marinades, pasta sauces, and soups, as well as an ingredient in dressings and dips, where it adds depth of flavor without excessive darkening. It should be stored in a cool, dark place before opening, and after opening, it is best kept in the refrigerator, tightly sealed, to preserve its aroma and limit oxidation.
