Description

Psyllium husks are a fine, light beige or gray powder that forms a thick, slimy gel when soaked. They are virtually tasteless, slightly grainy in their raw form, and highly absorbent, which affects the texture of dishes when water is added. This is a concentrated source of soluble fiber that supports bowel regularity, may help lower cholesterol levels and stabilize blood sugar, and promotes a feeling of fullness; at the same time, it has low energy value and is naturally gluten-free. In the kitchen, it is used as a thickener for soups, sauces, and jams, as a binder in gluten-free baking, as an egg substitute in vegan recipes, and to enrich smoothies or yogurts. Store in a sealed container in a cool, dry place away from moisture and light; once opened, it is best used within 12–24 months.
