Young cabbage
Description
Young cabbage is a light green, firm head with delicate, thin leaves and a mild, slightly sweet flavor, along with a pleasant crunch that easily absorbs spices. It is low in calories, rich in fiber, vitamins C and K, and folic acid, containing sulfur compounds and antioxidants that support digestion, immunity, and anti-inflammatory actions, which positively affect metabolism and cardiovascular health. In the kitchen, young cabbage works well raw in salads and coleslaws, briefly sautéed or stir-fried as a side dish for meats, as an ingredient in soups and light salads, and also for pickling to add an extra layer of flavor. Store it in the refrigerator in the vegetable drawer, without washing it before storing, preferably in a perforated bag; a whole head stays fresh for about 7–14 days, but once cut, it lasts shorter.
