Tapioca starch
Description
Tapioca starch is a fine, snow-white powder with a neutral, almost imperceptible taste that becomes transparent and thickening when cooked, giving dishes a silky texture. It is almost pure carbohydrate, low in protein and fat, gluten-free, and free from common grain allergens, making it gentle on the digestive system. It contains few micronutrients but can provide quickly accessible energy; in the form of resistant starch, it supports gut microbiota, although individuals with glycemic issues should use it in moderation. In the kitchen, tapioca starch is excellent for thickening sauces, soups, and fillings, stabilizing gluten-free bread, improving the texture of desserts, puddings, and bubble tea pearls, and adding crispness to coatings.
