Aromatic and warming drink, perfect for chilly autumn and winter evenings. Spiced Apple Mulled Cider is a non-alcoholic (with an alcoholic option) variation of classic mulled wine. Its base is natural, cloudy apple juice, which is slowly heated with a wealth of spices: cinnamon sticks, cloves, and star anise. Freshness and a citrus note are added by slices of juicy orange, while a surprising, forest-like accent comes from a sprig of fresh rosemary, which wonderfully balances the sweetness. The drink has a beautiful, deep amber color and fills the whole house with a wonderful, festive aroma. It can be served as a welcome drink at parties, enjoyed after a long walk, or simply savored by the fireplace with a good book. It is easy to prepare, and its flavor can be modified by adding honey for sweetness or a splash of brandy for extra warming power.

Preparation steps

Start by preparing the ingredients. Wash the orange very thoroughly under hot, running water, using a vegetable brush to remove wax and impurities from the skin. Then dry it with a paper towel. Cut half of the orange into thin slices about 0.5 cm thick, and squeeze the juice from the other half into a small bowl.

Since we are using the peel, it is crucial to wash it thoroughly. If you do not have access to unwaxed oranges, you can dip it in boiling water for 10-15 seconds and then scrub it. Use a sharp knife to ensure the slices are even and aesthetically pleasing.

In a large pot with a thick bottom (capacity about 2-3 liters), pour in the entire liter of apple juice. Add the prepared orange slices, the squeezed juice, cinnamon sticks, cloves, and star anise. Gently stir with a wooden spoon to evenly distribute the ingredients.

A pot with a thick bottom prevents the juice from burning and ensures even heat distribution. At this stage, do not add the rosemary or honey yet – we will add their aromas later for a more intense flavor.

Place a pot on the stove over medium heat. Slowly heat the drink until it starts to gently steam and is very hot, but DO NOT BRING TO A BOIL. Boiling would destroy the delicate flavors of the spices and vitamins. When the drink reaches the right temperature (just before boiling point), reduce the burner to the lowest setting.

The key to an aromatic mulled wine is slow heating. Watch the surface of the drink – when very small bubbles appear at the edges of the pot, it's a sign that the temperature is just right. The entire heating process should take about 8-10 minutes.

When the drink is hot, add two sprigs of fresh rosemary to the pot. Cover the pot with a lid and let it sit on the lowest heat for about 15-20 minutes. This time will allow all the flavors and aromas of the spices to infuse into the juice, creating a deep and complex bouquet.

Do not cook the mulled wine at this stage! It should only be gently simmering under the lid. Covering the pot is important so that the valuable essential oils from the spices do not escape with the steam.

Remove the pot from the heat. Now is the time to sweeten and enhance the drink if desired. If you want to add sweetness, stir in the honey until completely dissolved. If you are making the adult version, pour in the brandy or rum and gently mix as well. Strain the mulled wine through a fine mesh sieve directly into mugs or glasses to separate the used spices and orange pieces.

Honey added to a hot, but not boiling, drink will retain more of its health benefits. Always add alcohol at the very end, after removing from heat, so it doesn't evaporate during heating. Use a ladle for pouring to avoid spills.

Garnish each serving with a fresh slice of orange and a small sprig of rosemary (you can use extra ones, not the ones from cooking). Serve immediately while hot. The aroma rising from the cups is an integral part of this experience.

For decoration, you can also use a cinnamon stick or a star anise taken from the pot. Mulled wine tastes best in ceramic mugs, which keep the heat for a long time.
