When the drink is hot, add two sprigs of fresh rosemary to the pot. Cover the pot with a lid and let it sit on the lowest heat for about 15-20 minutes. This time will allow all the flavors and aromas of the spices to infuse into the juice, creating a deep and complex bouquet.
Remove the pot from the heat. Now is the time to sweeten and enhance the drink if desired. If you want to add sweetness, stir in the honey until completely dissolved. If you are making the adult version, pour in the brandy or rum and gently mix as well. Strain the mulled wine through a fine mesh sieve directly into mugs or glasses to separate the used spices and orange pieces.
