Syrup

Preparation of ingredients: peel the ginger thinly with a knife or a teaspoon (the skin is easier to scrape off with a teaspoon), then cut the ginger into thin slices about 2 mm thick. Weigh the honey and measure 120 ml of water into a small pot.

Use a sharp knife and a cutting board; using a teaspoon for peeling minimizes the loss of flesh. Prepare a fine sieve to strain the syrup.

In a small saucepan, combine 120 ml of water, 80 g of honey, chopped ginger, and 2 cinnamon sticks. Place over medium heat and warm, stirring with a wooden spoon, until the honey dissolves and the mixture begins to gently boil (small bubbles at the edge). Simmer on low heat for 4–5 minutes to allow the ginger and cinnamon to release their flavor.

Use a saucepan with a capacity of at least 1 l and a wooden spoon. Be careful not to bring it to a rapid boil — the syrup may overflow. If the honey does not dissolve, lower the heat and stir slowly.

After 4–5 minutes, remove the saucepan from the heat and let it sit for about 10 minutes to allow the syrup to cool slightly and the flavors to intensify. Strain the syrup through a fine sieve into a jug or glass measuring cup, pressing the remnants of the liquid from the ginger with a spoon. Remove the used cinnamon sticks.

Use a fine sieve or cheesecloth to make the syrup clear. The syrup is correct when it has a uniform, slightly thick consistency (syrupy, not liquid like water) and an intense aroma of ginger and cinnamon.

Drink

Pour 800 ml of clear apple juice into a large pitcher. Add the drained and cooled syrup from the saucepan (the whole amount, about 200–220 ml — this should be roughly the amount obtained after straining) and 30 ml of freshly squeezed lemon juice. Mix with a whisk or a large spoon for 20–30 seconds to combine the ingredients.

Use a glass or plastic pitcher with a capacity of at least 1.5 l. If the syrup is very hot, wait until it cools completely to avoid losing the flavors of the apple juice.

Chill the pitcher in the fridge for 5–10 minutes so the drink is pleasantly cool. If you plan to serve it right away, you can add a few ice cubes to the pitcher (optional). Stir again before serving to prevent the syrup from settling at the bottom.

If you want to maintain maximum fizz, do not mix vigorously after pouring in the sparkling water — vigorous stirring will release the bubbles.

Assembly and serving

Fill 4 tall glasses two-thirds full with ice (optional) and evenly distribute the prepared apple-ginger mixture. Just before serving, add 100–150 ml of chilled sparkling water to each glass — pour slowly down the side to maintain the fizz and layers.

The best is a tall Collins glass. Pour the sparkling water gently to avoid losing the bubbles. Adjust the amount of sparkling water according to your preferred intensity of flavor (less water = more intense flavor).

Decorate each glass with a few pomegranate seeds (about 10–15 g per glass) and hang a slice of apple on the rim. Optionally, place a cinnamon stick in each glass as a stirrer and decoration. Serve immediately to maintain the full fizz and crunch of the pomegranate seeds.

Additionally, you can add more pomegranate seeds for a more intense color. Use kitchen tweezers or a teaspoon to precisely arrange the seeds for an aesthetically pleasing drink.
