Preparation steps
Sugar-free ginger syrup
Heat the syrup, stirring constantly, until the erythritol is completely dissolved. You should obtain a clear liquid. As soon as the liquid starts to gently bubble (small bubbles will appear), reduce the heat to the minimum and cook for about 3-4 minutes to allow the ginger to release all its aroma. Then remove the saucepan from the heat and let it cool completely for about 15-20 minutes.
When the syrup is cold, prepare a small bowl and a fine sieve. Pour the syrup through the sieve, pressing the grated ginger with a spoon to extract as much aromatic liquid as possible. You can discard the ginger scraps. You will get a clear, sweet-spicy syrup ready for use.
Preparing the lemonade base
It's time to prepare the lemons. To get the most juice out of them, place each lemon on the kitchen counter and, pressing down firmly with your hand, roll it for several seconds. Cut the lemons in half and squeeze out the juice. It's best to use a citrus juicer. Pour the juice into a large pitcher, at least 2 liters.
Take a bunch of fresh mint. Tear off about 20-30 of the prettiest leaves from the stems. Place them in your hand and 'wake up' the mint by clapping your other hand – this simple trick will bruise the leaves slightly and release an intense, refreshing aroma. Toss the 'awakened' mint leaves into the pitcher with lemon juice.
Combining and serving
Pour the prepared and cooled ginger syrup into the pitcher with lemon juice and mint. Then add the remaining chilled mineral water (about 1250 ml). Gently stir the mixture with a long spoon to combine all the flavors.
Prepare the serving glasses. Fill them with ice cubes up to 1/3. If you are using lemon for decoration, slice it into thin rounds now. Place 1-2 slices in each glass. Carefully pour the prepared lemonade into the glasses.
Garnish each serving with a fresh mint leaf on top. Serve immediately to enjoy maximum refreshment. Bon appétit!
