Wash the oranges and pomegranate under running water. Dry the oranges and grate a thin layer of zest from one orange using a fine grater (grate only the outer layer - avoid the white, bitter part). Then cut both oranges in half and squeeze the juice using a manual juicer: you should get about 200–250 ml of juice. Remove the seeds from the pomegranate: cut the pomegranate in half, hit the bottom of the half with a spoon while holding it over a bowl — the seeds should fall out. Set aside about 150 g of seeds for decoration.

Use a manual juicer or an electric juicer. When zesting, be careful not to grate the white layer (pith) - it adds bitterness. When deseeding the pomegranate, hold the skin of the fruit with one hand to prevent the seeds from splattering around the kitchen.

Ginger-Cinnamon Infusion

Peel the ginger using a teaspoon or a peeler (scraping off the thin skin), and cut it into thin slices. In a medium pot (about 1 L), pour in 400 ml of water, add the ginger slices and 1 cinnamon stick. Bring to a boil over high heat, then reduce the heat to low and simmer gently for 4-5 minutes — the infusion should smell strongly of ginger and cinnamon. Turn off the heat and cover the pot for 2 minutes to allow the flavors to settle.

Use a pot with a capacity of at least 1 liter. If you want a stronger drink, boil for 6-8 minutes, but no longer than 10 minutes, as the ginger may take on a bitter taste. The ginger slices can be left in the drink later as a decoration or removed with a strainer.

Combining and sweetening

Strain the hot infusion through a fine sieve into a clean pitcher to remove the ginger slices and cinnamon (if you want to leave some pieces for decoration, skip the straining). Add 30 g of honey to the hot infusion and stir with a wooden spoon until completely dissolved (about 30–60 seconds). Add freshly squeezed orange juice and lemon juice, and mix gently. Taste and adjust seasoning — if you prefer it sweeter, add up to 10 g more honey.

Use a wooden or silicone spoon for mixing (metal cools down quickly). Add honey to the hot infusion – it dissolves faster. If the drink is too hot, let it cool slightly before adding the honey to preserve the citrus aroma.

Seasoning and adding pomegranate

Add 150 g of pomegranate seeds to the pitcher with the drink and gently stir with a spoon to distribute the seeds evenly. If you like, set aside a few tablespoons of seeds for decorating the glasses. Taste the drink: it should be harmoniously sweet and sour with a noticeable hint of ginger and cinnamon.

Serving — hot version

Pour the drink into transparent glasses (about 200–250 ml per serving), placing a few pomegranate seeds and a slice of orange on the rim of each. If you want an alcoholic version, add 30 ml of dark rum to each serving just before serving.
