Preparation steps

Prepare a simple syrup: in a small saucepan, combine 30 g of sugar and 50 ml of water. Heat over low heat, stirring with a wooden spoon, until the sugar completely dissolves (this usually takes 1-2 minutes). When the syrup starts to gently steam, turn off the heat and let it cool for 5 minutes.

Use a small saucepan with a diameter of about 14 cm. Stir until the sugar crystals are completely dissolved — the syrup should be clear. Do not bring to a boil over high heat, otherwise too much water will evaporate.

To the cooled syrup, add 20 ml of fresh lemon juice and mix thoroughly with a fork or a small whisk. Taste — the syrup should be distinctly sweet and sour; if it is too sour, add a maximum of 5 g of sugar and mix.

For juicing, use a manual citrus juicer, as it will make it easier to separate the seeds. If you don't have one, squeeze the juice with a knife and strain it through a sieve.

Preparing the fruits

Wash 240 g of strawberries under running cool water (for about 20-30 seconds), and dry with a paper towel. Remove the stems and cut larger strawberries into quarters or slices about 5-7 mm thick. Set aside a few small, nice fruits whole for decoration; place the rest in a bowl.

If you are using raspberries (optional), gently rinse 100 g of raspberries, pat them dry, and set aside. Chilling and preparing the glasses

Chill the champagne glasses: place them in the freezer for 5-10 minutes or fill them with cold water and ice for 3-4 minutes, then quickly dry them. If using ice (optional), prepare crushed ice in a bowl.

The best are tall flute glasses to keep the bubbles. Do not keep the glasses in the freezer for more than 15 minutes — they may crack due to sudden temperature changes.

Assembly

Start assembling the drinks: evenly distribute the chopped strawberries at the bottom of each glass (about 60 g of strawberries per glass — a total of 240 g for 4 servings). If you are using raspberries, add 25 g of raspberries to each glass. If you want more sweetness, you can add 5 ml of prepared lemon syrup to each glass for this layer (a total of 20 ml).

Gently pour the chilled champagne or prosecco into each glass — pour slowly down the side of the glass to minimize excessive frothing. For one serving, use about 187-190 ml (750 ml / 4). After pouring, check if the foam has settled; if the glass is too frothy, wait 10-20 seconds for the bubbles to subside and top up with the rest.
