Chickpeas
Description
Chickpeas are small, round legumes with a creamy, slightly grainy texture when cooked and a characteristic nutty-sweet flavor. They typically appear in shades of beige, less often in shades of green or black, and soften when cooked while maintaining a firm structure, making them a versatile kitchen ingredient. As a source of plant-based protein and fiber, chickpeas also provide complex carbohydrates, iron, folic acid, magnesium, and B vitamins, supporting digestion, glucose stabilization, satiety, and heart health. In the kitchen, they work well in hummus, salads, soups, stews, falafels, as an addition to curry, processed into flour, or roasted until crispy; they pair excellently with lemon, garlic, cumin, tahini, and olive oil. Store dry beans in an airtight container in a cool, dry place for up to a year, cooked chickpeas in the refrigerator for 3–4 days, or freeze for up to 3 months.
