Description
Red beans have oval, shiny seeds in an intense red color and a slightly nutty, mildly sweet flavor with a creamy texture when cooked. Their vivid color and meaty structure pair well in dishes with deep flavors, such as chili, stews, salads, soups, as well as Mexican cuisine and vegetarian patties or spreads. They are a source of plant protein, fiber, folic acid, iron, and potassium with low fat content, which supports digestion, glucose control, satiety, and heart health. Store dry beans in an airtight container in a cool, dry, and dark place; keep canned beans in the pantry, and after opening, store in the refrigerator in a closed container for up to 3–4 days. Cooked beans can be frozen for about 3 months.
