Served hot, in thick glasses or mugs, garnished with a slice of orange and a star anise, it becomes not just a drink but a true ritual of celebrating the winter atmosphere.

Preparation steps

The first step is to prepare the fruits. Take a large orange and scrub it thoroughly under warm running water using a vegetable brush. Since we will be using it with the peel, it is important to remove any dirt and possible wax. Then dry it with a paper towel. Using a sharp knife, cut the orange into slices about 0.5 cm thick. Place the cranberries (fresh or frozen) in a sieve and rinse them under cold water.

It's best to use organic certified oranges or those labeled as 'unwaxed'. If you only have waxed ones, blanch them in boiling water for a few seconds and scrub to remove the wax. Use a sharp knife for cutting to ensure the slices are even and not torn.

In a large pot with a thick bottom (minimum 2 liters), place all the prepared ingredients. Pour in the entire liter of apple juice. Add the rinsed cranberries, sliced orange segments, two cinnamon sticks, whole cloves, and two star anise. If you are using optional ginger, peel it and slice it thinly, then add it to the pot as well.

Use a pot larger than the volume of the liquid to avoid boiling over. A thick bottom will prevent the sugars from the juice from burning. At this stage, do not add honey or any other sweetener – we will do that at the very end.

Place a pot on the stove over medium heat. Slowly heat the mixture, stirring gently with a wooden spoon from time to time to combine the flavors. Bring the liquid to the point where it is very hot and steam starts to rise from it, but DO NOT BRING TO A BOIL. As soon as you notice the first bubbles on the surface, immediately reduce the heat to the minimum.

A key mistake is boiling the drink. Boiling causes the delicate aromas of the spices to evaporate, and the drink can take on a bitter taste from the citrus peels. We want the drink to 'simmer' very gently, not bubble.

Cover the pot with a lid, leaving a small gap, and let the drink heat on the lowest setting for about 20-25 minutes. During this time, the spices will release their full aroma, the cranberry will soften and impart its color and flavor, and the whole kitchen will fill with a festive scent. You will notice that the drink has taken on a deep ruby color.

Gentle heating is an infusion process – flavors and aromas seep into the juice. Do not stir too often to avoid crushing the fruits. Just let the magic happen.

After 20-25 minutes, remove the pot from the heat. Using a ladle, pour the mulled wine through a fine mesh strainer into another pot or pitcher to separate the liquid from the fruits and spices. If you like, you can gently press the fruits with a spoon to extract the remaining juice. Now it's time to add the sweetener (if you're using it). Add honey or maple syrup and stir until completely dissolved. Taste and add more sweetener if needed.

Straining the drink will ensure clarity and a velvety texture. For serving, prepare cups or glasses made of thick glass that retain heat well. You can warm them up beforehand by pouring hot water into them.

Pour the hot, strained drink into the prepared mugs. To make it look beautiful, you can add a fresh slice of orange, a few cranberries from the pot, or one of the star anise used for cooking to each serving. Serve immediately while it is hot and most aromatic.

Decoration is not mandatory, but it makes the drink look more appetizing and professional. You can also stick a few cloves into a fresh slice of orange and place it on top of the drink.
