Preparation steps
In a large pot with a thick bottom (minimum 2 liters), place all the prepared ingredients. Pour in the entire liter of apple juice. Add the rinsed cranberries, sliced orange segments, two cinnamon sticks, whole cloves, and two star anise. If you are using optional ginger, peel it and slice it thinly, then add it to the pot as well.
Place a pot on the stove over medium heat. Slowly heat the mixture, stirring gently with a wooden spoon from time to time to combine the flavors. Bring the liquid to the point where it is very hot and steam starts to rise from it, but DO NOT BRING TO A BOIL. As soon as you notice the first bubbles on the surface, immediately reduce the heat to the minimum.
Cover the pot with a lid, leaving a small gap, and let the drink heat on the lowest setting for about 20-25 minutes. During this time, the spices will release their full aroma, the cranberry will soften and impart its color and flavor, and the whole kitchen will fill with a festive scent. You will notice that the drink has taken on a deep ruby color.
After 20-25 minutes, remove the pot from the heat. Using a ladle, pour the mulled wine through a fine mesh strainer into another pot or pitcher to separate the liquid from the fruits and spices. If you like, you can gently press the fruits with a spoon to extract the remaining juice. Now it's time to add the sweetener (if you're using it). Add honey or maple syrup and stir until completely dissolved. Taste and add more sweetener if needed.
Pour the hot, strained drink into the prepared mugs. To make it look beautiful, you can add a fresh slice of orange, a few cranberries from the pot, or one of the star anise used for cooking to each serving. Serve immediately while it is hot and most aromatic.
