Preparation steps

Preparing the fruits

Preheat the oven to 200°C (if you have a fan oven set it to 190°C). Wash the plums under running water and dry them with a paper towel. Cut each plum in half lengthwise and remove the pits: hold the halved fruit in one hand, carefully insert the knife blade next to the pit and twist the fruit. Place the halves cut side down on a baking sheet lined with parchment paper or on a lightly greased baking sheet.

Use a sharp kitchen knife and a stable cutting board. If the plums are very soft, do this gently to avoid crushing the flesh. The baking tray should be larger than 30x20 cm.

Roasting fruits

Drizzle the halved plums with a thin layer of 20 g of honey (spread it with a teaspoon over the skin) and place them in the preheated oven. Bake for 18-22 minutes — the plums should wrinkle, the juice will start to bubble and darken, and the skin will lightly caramelize. Remove the tray and let it sit for 5 minutes to cool slightly; they should not be hot like lava, but warm to the touch.

Use a teaspoon or a pastry brush to spread the honey. Bake longer (up to 25 minutes) if you want a more concentrated flavor. Do not bake for less than 16 minutes, as the plums will not release enough juice.

Orange juice

Squeeze the juice from the oranges: cut the oranges in half and use a manual or electric juicer. Pour the juice through a strainer into a measuring cup to separate the seeds and larger pieces of pulp. Measure about 450 g of juice (approximately 450 ml). If the juice is very pulpy, you can strain out some of the pulp.

Use a strainer to separate the seeds. If you don't have a juicer, you can use a fork: pierce the pulp and squeeze by hand.

Spice syrup

In a wide pot with a capacity of about 2 liters, pour in 600 ml of water. Add 40 g of brown sugar, 30 g of fresh ginger sliced thinly, 6 g of cinnamon stick, 4 g of star anise, and 2 g of cloves. Place over medium heat and bring to a gentle boil. Reduce the heat and simmer for 8-10 minutes, until the syrup takes on the aroma of the spices and thickens slightly — it should have a sweet, amber color, and the scent of the spices should be intense.

Use a heavy-bottomed pot to prevent the syrup from burning. Stir occasionally with a wooden spoon. If the syrup starts to boil too vigorously, reduce the heat — it should be a gentle simmer.

Cooking the drink

Add the roasted plum halves to the hot syrup along with the freshly squeezed orange juice and 30 ml of lemon juice. Slightly increase the heat and bring to a gentle boil. Cook for 4-6 minutes, then use a wooden spoon or potato masher to lightly crush a few plum halves — you want to release the flesh and juices, but not break everything down into a mush. Taste the drink and if needed, add the remaining 60 g of honey, stirring until dissolved. The finished drink should have a balanced sweetness, distinct orange notes, and a warm spiced background.

Use a wooden spoon to mash the plums (metal can scratch the pot). If you want a clearer consistency, strain the drink through a fine sieve before serving. Do not cook too long after adding the orange juice — the total cooking time from the moment it boils should be 4-6 minutes.

Finishing and alcohol (optional)

If you are serving an adult beverage and want to add an alcoholic flavor, remove the pot from the heat and pour in 80 ml of dark rum just before pouring into mugs. Stir gently to combine the alcohol with the drink. Adding alcohol after removing from heat preserves the rum's aromas.

If you don't want alcohol, skip this step. When adding rum, remember not to heat the alcoholic beverage over the fire — some of the alcohol's aromas will evaporate.

Honey foam (optional)

To prepare the sweet foam, heat 200 ml of milk to a temperature of about 60°C (it should be hot but not boiling). In a separate cup, mix 20 g of honey with 10 ml of warm milk, then combine it with the rest of the milk and froth using a manual frother, electric frother, or blender on high speed for 20-30 seconds until a thick, creamy foam forms. Spoon the foam on top of the drink just before serving.

Use a milk frother, a French press (by pumping), or a small hand blender. For a vegan version, use oat or soy milk. Do not heat the milk above 70°C — it will start to curdle.

Serving

Heat four mugs or glasses (heatproof mugs are recommended). Pour the drink into each serving through a strainer if you prefer it without pieces. Top with a tablespoon of foam, garnish with half a slice of orange, a cinnamon stick, and a single star anise. Serve hot; the drink tastes best right away.
