Preparation of ingredients

Prepare the pomegranate seeds: cut the pomegranate in half horizontally, hold one half over a bowl with the skin side up and hit the inside of the fruit with a wooden spoon to release the seeds into the bowl; remove the membranes. Repeat until you have about 120 g of seeds. If you are using ready-made seeds, set them aside in a small bowl.

Use a wooden spoon and a large bowl — it's easier to catch splashes. Be careful not to crush the seeds too much (you'll release juice, and the seeds may stain your hands).

Peel and grate the ginger on a fine grater. Grate 30 g of the root thoroughly — this should yield about one tablespoon of freshly grated pulp. If you prefer a milder accent, use 20 g.

Use a fine grater or microplane. A teaspoon works well for peeling (easier than a knife). If you want a less fibrous result, after grating you can strain the ginger through a fine sieve, collecting only the juice.

Sweetening and Flavoring

In a small bowl or cup, pour in 60 ml of apple juice (measuring from the main bottle) and heat in the microwave for 15–20 seconds until it reaches about 35–40°C (it should be pleasantly warm, not hot). Add 60 g of honey and stir for 20–30 seconds until completely dissolved — a liquid sweet concentrate will form.

Use ceramic or silicone bowls and spoons. Do not heat for too long (above 45°C, some of the honey's aromas are lost). If you don't have a microwave, heat water in a pot and place the bowl with honey over the steam.

Mixing the base

In a large pitcher (at least 1.5 l), combine the remaining apple juice (540 ml), pomegranate juice (200 ml), grated ginger (30 g), and lemon juice (40 ml). Pour in the prepared honey concentrate. Whisk vigorously for 30–45 seconds until the liquid becomes uniform and slightly frothy on the surface.

Use a measuring jug and a whisk or salad spoon. If you don't want ginger fibers in the drink, strain the liquid through a fine sieve into another jug after mixing.

Seasoning

Taste the drink and assess the balance of sweetness and acidity. If you want a sweeter flavor, add 5–10 g of honey and stir until it dissolves. If you need a more pronounced acidity, add 5–10 ml of lemon juice.

Taste with a teaspoon — remember that after adding sparkling water, the flavor will become slightly diluted. Make adjustments gradually.

Assembly and serving

Prepare 4 tall glasses. Place 30 g of pomegranate seeds at the bottom of each glass and add 50 g of ice cubes. First, slowly pour an equal portion of the mixture (about 160 ml) into each glass, pouring over a spoon turned upside down at the edge of the glass to minimize frothing and achieve a smooth layer. Then, gently top each glass with chilled sparkling water (about 100 ml) or — if you choose the alcoholic version — replace 100 ml of water with 100 ml of prosecco, pouring very slowly to maintain the fizz. The surface should be sparkling, and the color should create a subtle gradient from gold to ruby.

The best glasses are those with straight sides (highball). Pouring over a spoon helps maintain the layer and aesthetic appearance. Do not mix too vigorously after adding the bubbles — keep gentle pauses between pouring.

Garnish each glass with a few pomegranate seeds and a mint leaf (if using). Serve immediately, providing a teaspoon for stirring if guests prefer a more homogeneous drink.
