Preparation steps

Ginger-honey syrup

Prepare the syrup: peel the ginger thinly with a teaspoon, grate it on a fine grater to obtain 30 g of grated mass. In a small saucepan, pour in 60 ml of water, add the grated ginger and 60 g of honey. Heat over low heat for 4-5 minutes until the honey completely dissolves, stirring with a wooden spoon. The syrup should gently simmer, do not allow it to boil. After 5 minutes, remove from heat and let cool for 10-15 minutes to room temperature.

Use a small saucepan with a diameter of 14–16 cm and a wooden spoon. Do not cook on high heat or allow it to boil vigorously (honey loses some of its aroma). If you want a stronger ginger flavor, increase the amount of ginger to 40 g.

Strain the syrup through a fine sieve into a small jug or jar, using a spoon to press the ginger sediment and extract maximum flavor. Some fibers will remain in the settled ginger pieces — this is normal. Set the syrup aside for use in assembly.

Use a sieve with holes of about 1–2 mm or cheesecloth. If you don't want the syrup to have fibers, strain it twice. The syrup can be prepared in advance and stored in the refrigerator for up to 5 days.

Juice and straining

Prepare the juices: wash the oranges and cut them in half. Using a manual or mechanical juicer, squeeze the juice without the white parts of the peel into a large pitcher — you should get about 300 g (ml) of juice. Strain the juice through a sieve if you prefer a clear drink. In the same pitcher, combine the orange juice with 200 ml of apple juice and 30 g of lime juice.

For squeezing, use a manual citrus juicer or an electric one — it's faster and cleaner. Straining through a medium-mesh sieve will remove larger pulp, making the drink more elegant.

Muddling pomegranate: weigh 120 g of pomegranate arils, place them in a small muddler or in a spoon and gently crush them in a bowl for 20–30 seconds to release the juice and color. Do not crush too aggressively — the goal is to extract the juice, not to break the seeds into a paste. Strain the resulting mixture through a sieve, pressing with a spoon to obtain a rich ruby juice.

Use a cocktail muddler or the back of a wooden spoon. If you don't want the extra work, you can skip the muddler and add whole arils to the drink as a decoration.

Assembly and serving

Combine the drink base: in a pitcher with juices (orange + apple + lime) pour in the strained pomegranate juice and 40 g of the prepared ginger-honey syrup (about 2 tablespoons). Gently stir with a spoon for 10–15 seconds, taste, and adjust the sweet-sour balance: if it's too sour, add up to 10 g (about 1 teaspoon) of additional honey dissolved in 10 ml of warm water; if it's too sweet, add 10–20 g of lime juice.

Use a large pitcher with a capacity of at least 1.5 l and a long bar spoon or wooden spoon. Stir gently to avoid losing the aroma of the freshly squeezed juices.

Add the fizz and optional alcohol: just before serving, pour 800 ml of very cold sparkling water into the pitcher and gently stir for 5–7 seconds to keep the bubbles. For the alcoholic version, add 60 g of dark rum and stir briefly. Fill tall glasses with ice cubes (optional), placing 10–15 g of several whole arils (the remaining 80 g) at the bottom of each. Pour the punch into the glasses in equal portions.

Use chilled sparkling water straight from the fridge; add it at the end, as mixing it earlier will cause the bubbles to disappear. If you are adding alcohol, stir very gently.

Decoration

Finishing and decoration: add a slice of orange to the rim of each glass, sprinkle the top with 2–3 whole arils and place a sprig of mint (use 3–4 g of leaves per glass, the rest is optional). Serve immediately — the drink tastes best fresh and sparkling.
