Preparation steps

Spice infusion

Prepare all the tools: a medium pot (about 1.5–2 l), a fine sieve or cheesecloth, a citrus grater, a wooden spoon. Measure 500 ml of water and pour it into the pot.

Ingredients: Water
Use a pot with a diameter of 18–20 cm so that the liquid heats evenly. If you don't have a grater, use a vegetable peeler, carefully cutting off the white part of the peel.

Add 6 g (2 sticks) of cinnamon, 3 g of cloves, and 2 g of cardamom to the cold water, along with grated orange peel (6 g). Place the pot over medium heat and heat until the first small bubbles start to appear at the edge (do not bring to a vigorous boil).

Use a wooden spoon to stir the ingredients. Control the heat — too strong a boil will "evaporate" the alcohol and intensify the spices. You want a gently bubbling infusion (about 70–80°C).

Reduce the heat and let the spices infuse for 5 minutes. After 5 minutes, you will sense an intense spicy aroma and a subtle sweet-citrus note from the zest — this is a sign that the infusion is ready.

Do not cook longer than 7–8 minutes, as the drink may develop a bitter aftertaste. If you want a stronger cinnamon flavor, leave it for an additional 1–2 minutes, but taste every 30 seconds.

Finishing

Remove the pot from the heat and strain the liquid through a fine sieve into a jug or another heatproof container to remove the cinnamon sticks, cloves, and cardamom. The strained liquid should have a clear, slightly golden color with a distinct aroma of spices.

Use a sieve lined with cheesecloth if you want the clearest drink. Leave the pot for a moment so you don't burn yourself while straining.

Add 400 ml of fresh orange juice and 30 ml of lemon juice to the drained base. Stir with a wooden spoon to combine the ingredients. Gently heat the mixture (do not bring to a boil) for 1–2 minutes — we want to blend the flavors and slightly warm the juice.

A wooden spoon will prevent a metallic taste; stir vigorously but gently. Check the temperature — steam should be rising, but it should not be boiling.

Sweetening and Color

Add 50 g of honey and 40 ml of grenadine to the heated drink. Stir for 1–2 minutes until the honey is completely dissolved and the grenadine gives an intense, ruby color. Taste and adjust the sweetness by adding an extra teaspoon of honey if you prefer sweeter drinks.

If the honey does not dissolve easily, maintain a low temperature and stir longer. Vegan version: replace honey with 50 g of maple syrup.

Finalization and serving

Add 120 g of pomegranate seeds to the pitcher — some will sink to the bottom, while others will float, creating a striking color contrast. Prepare 4 transparent cups or glasses; pour the drink evenly.

Use a ladle to pour evenly. If you want a cold version: let the drink cool down, place it in the fridge for 10–15 minutes, and serve with ice.

Into each glass, place one piece of cinnamon stick and a slice of orange (if you like, you can gently press the slice against the edge of the glass before serving). Optionally, add 20 g of fresh mint and/or 200 g of ice for the cold version. For the sparkling version, add 25 ml of sparkling water to each serving just before serving to keep the bubbles.

Additionally, you can add sparkling water for a fizzy effect or ice for cooling. If you add ice, reduce the amount of juice by about 20–30 ml per serving to avoid diluting the flavor too much.

Serve the drink hot (with a steaming surface and floating pomegranate seeds) or cold with ice and bubbles. You can additionally garnish each serving with a few extra pomegranate seeds on top.
